I don't count 1-10 , picking one to be the best, but they are all great fun.
here goes and please add any I missed of course....
oh and this can be any genre- so be creative
1. Omen - best slow mo
2. Apocalypto- many heads fly all over
3. Sleepy Hollow- many heads will roll
4. Predator- even though most of the action takes place off screen
5. Friday the 13th- Jason's Mom ofcourse- count even Freddy's demise at the end of Freddy VS. Jason
6. Zombie flicks- too many to mention. Everyone has there favorite
7. Indiana Jones and last Crusade- nazi heads go flying-kneel before God!
8. Braveheart- darn i'm going astray
9. 13th warrior
10. carnosaur- i think its the only movie i can remember at the moment that a dino bits a guys head off. if you can think of one awesome.
some i just thought up.
Lake placid and prophecy- that weird one with the mutant bear.

I forgot which Final Destination ( I know, I know, It still sucked.) but the piece-O-metal flying becuase of a train through the jaw is one of the best.

Haute Tension - dresser decap.
Wrong Turn - the half-cap
Seven - while you don't see it happen and you don't see the end product -- it is definitely effective and spine tingling
Leathal... that was the OG Final Destination. I also thought the elevator decap. in the second Final Destination was pretty good too.

that old episode of Amazing Stories where the kid played a record backward and did a spell to kill his teacher, Christopher Lloyd but accidently ripped head off of his picture.. resulting in a headless Lloyd terrorizing him and this chick. was creative at least.

actually if you pause it at the right moment in Seven you can see Paltrow's decapitated head. it when Brad is trying really hard not to shoot him, but then does. there is an inserted frame there that if you blink you will miss it.

The Mutilator - quite a few decapitations in that movie actually haha
Madman - marz jumps on the hood of a truck resulting in a girls' decapitation
Necromantik 2 - the ending...just watch it if you haven't
Showdown In Little Tokyo - a blonde chick gets decapitated with a sword near the beginning
Maniac - ending bit.
Scanners - head explosion/decapitation
Pieces - too many good scenes in that one

Hands down the best decapitation I've seen put to film was in last year's "Dark Ride" that was part of the "After Dark Filmfest". While a character is getting a BJ from a hitchhiker they picked up, the killer sneaks behind the girl while she's on her knees and as the guy is cuming the masked killer quietly and quickly cuts of her head but leaves it on the body. The guy has his eyes closed while he shoots his load of man chowder down her throat and once he finishes off, pulls her head (and he presumes the rest of her) up for a kiss only to realize he has just yanked her dome clean off. Just when you though it couldn't get any better her decapitated head spits up a mixture of blood and semen. Yeah, it was great.
